Phylosophy
Spending time in a cafe is an expression of the modern, urban lifestyle and a way to create a community with those around you. Brew&Co is not just a coffee shop, but for us Brew&Co = Community Access For Everyone, especially dog lovers who want to take their fur babies to a cafe and enjoy a good coffee. Each neighborhood is different and the people who live and work there, who pass through for leisure form a particular community. Our artisan coffee house is designed with the particular neighborhood and community in mind.
Our People
A community is all about people, and for us, that starts with our own people. We started out as a couple who loved coffee and taking our bulldog to dog friendly cafe’s. The best way to keep that going was to build our own cafe and make it “dog friendly”. Over time, like-minded people became our customers. Our community grew organically, and we attract people who share our values of building community around good coffee.
Our Coffee
Our incredible coffees that is sourced from Brazil and the long-standing direct trade partners that our roasters at ORIGIN work with there. The roast profile for our coffee creates a darker, more traditional roast than other blends.
To build this blend ORIGIN roasters drew on three of their trusted long-term partners. Ricardo Barbosa is their go-to to add bass toned richness. For dark sugar sweetness and chocolate notes they looked to Virgulino Muniz’ crops. São João – courtesy of Osvaldo Bachião – completes the blend with an added layer of complexity. This coffee is clean and sweet with flavours of dark sugar and chocolate. Stronghold is built to please those that want a simple, easy and intense cup. A coffee that is sweet but with no acidity.
